Lead, a heavy metal ranked among EPA's most significant environmental pollutants, enters our food supply in a number of ways: leached into tap water delivered from aging pipes or pipes joined with lead solder; leached into food cooked in ceramics glazed using unsafe techniques; leached into wine stored in lead-crystal decanters or poured from bottles with lead-foil caps; leached into food from lead-soldered cans (although 90 percent of the cans in the United States no longer are soldered with lead, many imported cans still are). The amount of lead in the environment has steadily increased, making it one of the top environmental pollutants. It is especially hazardous to children (see pp. 256-260). Sources of Exposure: Lead is found in the air from various sources, notably car exhaust fumes, as well as from smelters; firing ranges; and the burning of lead-based-painted wood, newspapers, magazines, and battery casings. It is found in the soil and house dust (from old, flaking lead-containing paint). Adults are most commonly exposed to toxic levels of lead through inhalation of lead-containing dust in the workplace.
